Lavender Butter Cookies

If you love Lemon Curd (like we do) then you have to try this recipe!
INGREDIENTS:
- 5 egg yolks
- 1/2 cup sugar
- Strained juice from 3 lemons
- 1 Tsp lemon zest
- 1 jar of GREENSPICE Lavender Butter
DIRECTIONS:
- Combine the egg yolks with sugar and mix well
- Add the lemon juice (make sure the egg yolks and sugar are well mixed otherwise the lemon juice will scramble the yolks)
- Add in the lemon zest
- Cook on low heat and constantly stir with a spatula
- When the color starts to get opaque and you see little bubbles on the edges and the curd thickens take off the heat
- Pour the curd through a mesh into a mixing bowl (this catches the lemon zest so the curd remains nice and smooth)
- Add Lavender Butter to the bowl (make sure it is at room tempurature)
- Mix the curd and butter until it is smooth and consistent
- Pour into clean and dry jars
- Refrigerate and use within 2 weeks
It's great in oatmeal, on pancakes or waffles, on ice cream . . . or straight from a spoon
